2 eggs
1 handful of graded romano cheese
1 pinch of baking soda
1 zucchini
1 tbsp salt
¼ of a green pepper (diced small)
½ onion (diced small)
¾ cup flour
¾ cup of pancake mix
½ tsp garlic salt
2-3 cups of water

Directions:

Beat eggs and combine with graded romano cheese and baking soda in a bowl. Grade zucchini with cheese grader (leave skin on). Sprinkle the salt onto the graded zucchini and let it set for about 1 hour. Squeeze all of the water out of the zucchini. Mix the pepper, onion, flour, and pancake mix with the zucchini into the bowl. Dash salt and pepper to taste. Add garlic salt and water (gradually) to the bowl. Mix all together (should be thicker than pancake batter) and put oil in a frying pan. Make the patties around 2-3 inches in diameter and flip to other side after golden brown. Drain on paper towel and let cool.
