Ingredients: ½ lb. dried kidney beans, sort and rinse 2 qt. water 1-2 lrg. smoked ham hocks ½ c. onion, diced ½ c. green bell pepper, diced 1 celery stalk, diced 3 garlic cloves, minced 2 bay leaves 2 tsp. parsley 1 tsp. thyme ¾ tsp. cayenne pepper ½ tsp. sugar (I use Stevia) ½ tsp. cajun seasoning ⅛ tsp. salt (optional) 1 pkg. cajun or regular andouille sausage, cut into 2 in. chunks, cut those into halves 3-4 c. cooked rice

Directions:On stove top, put water and ham hock(s) in large boiler/dutch oven and boil for 45 minutes on medium-high heat.
Place dried beans in medium bowl with cold water and let soak until ready to sort and put into boiler.
After 45 minutes, sort through beans and add to boiler. Then add all other ingredients except, sausage and rice. Stir to combine.
Turn down stove top and simmer, uncovered, about 2½ hours.
Put sausage in boiler when beans are almost ready, after 2 hours.
**Add more water at end if bean mixture seems too thick or dry.
**Double the ingredients of this recipe for 1 lb. of red beans.
Serve with rice or over rice in bowl. Garnish if desired. |

Notes: I learned how to cook red beans while we were stationed/lived in Ft. Polk, Louisiana. Everyone has different ways of making their red beans but this recipe was always my favorite.
