1 pound ground beef
1 small onion, chopped
1 teaspoon italian seasoning
1 teaspoon garlic powder
1 bag frozen mixed vegetables
1 can beef broth
cornstarch mixed with water to thicken
2 to 3 potatoes, cut into 8ths
1 ½ cup cheddar cheese
½ cup sour cream

Directions:
Directions:
In a skillet, brown ground beef. Add onion and cook until tender. Add italian seasoning, garlic powder, vegetables, and broth. Stir and simmer while potatoes are cooking. Place potatoes in pot and cover with water. Boil until tender. Mash with sour cream and ½ cup cheddar cheese. Set aside. Add cornstarch mix to ground beef mix and thicken. Pour into a baking pan and let cool for about 10 minutes. Top beef mixture with mashed potatoes and spread to cover. Bake at 350 degrees for about 30 minutes. Top with remaining cheese and cook just until cheese is melted.
