⅔ cup honey
⅓ cup rice vinegar
1 cup mayonnaise
2 T. Dijon mustard
1 tsp. oil

Salad:
1 egg
¾ cup milk
¾ cup flour
½ cup cornflake crumbs
½ cup Panko breadcrumbs
2 tsp. salt
¼ tsp. pepper
3 chicken breasts
2 cups vegetable oil (for frying)
6 cups chopped romaine lettuce
1 cup red cabbage, optional
¾ cup carrots, julienned or shredded
½ cup sliced almonds
1 cup chow mein rice noodles

Thoroughly mix dressing ingredients then move to the fridge to cool while preparing salad. Preheat oil in a deep fryer or deep pan over medium heat (or 350º). Beat together egg and milk in a small bowl. In another bowl, combine flour with corn flakes and Panko breadcrumbs, salt and pepper. Cut each chicken breast into 4-5 long strips and dip in egg then flour mixtures. Fry for 6-7 minutes or until browned then remove to plate covered with a paper towel. If needed, place chicken in oven at 350º to completely finish cooking chicken. Prepare salad by tossing the chopped romaine with the cabbage and carrots. Sprinkle on almonds (I carmelize the almonds with 2 T. sugar in a saute pan), then the chow mein noodles, chicken pieces and dressing
