1 cup Parboiled Rice (washed)
1 cup finely chopped Tomato (big one)
3 tbsp Olive Oil
5 tbsp Tomato sauce
1 cup finely chopped Carrot
1 cup finely chopped Onion
6 cloves minced Garlic
½ tsp Chili flakes or to your taste
1½ tsp salt or to your taste
Bay leaf
Spring Onion to garnish
4 to 5 cups of hot water (depends how liquid you prefer)

In a stock pot add 3 tbsp of olive oil, carrots, garlic, bay leaf, chili flakes and onion. Simmer until soft. Add tomato sauce and mix in for about 30 seconds. Add in tomato and simmer until soft. Add in washed rice and mix well. Add salt and simmer for about 30 seconds, stirring as it simmers. Add boiling water, stir, cover and simmer for 15 minutes. Remove from heat and leave covered for an additional 5 minutes. I added one boiled chicken breast (shredded) to make it more like meal of soup.

If you prefer to make this less of a soup and more of a side dish, You can reduce the amount of water and increase the amount of rice by 1/2 cup. This recipe is a Portuguese recipe.
