5 medium sweet potatoes
1½ c. sugar
½ stick butter
1½ tsp. pure vanilla extract
½ c. milk
3 eggs
1 T. lemon juice
2 T. nutmeg
1 c. mini marshmallows (optional)
cooking spray

Directions:
Directions:
Preheat oven to 350º F. Scrub sweet potatoes and place in a large sauce pan. Add enough water to cover the potatoes and bring to a boil. Cook for 20 minutes or until potatoes are tender. (prick potatoes with the tines of a fork to test for doneness) Drain, cool and peel. Mash potatoes in a large bowl. Combine potatoes, sugar, butter, milk, vanilla, eggs, lemon juice and nutmeg. Spray casserole dish with cooking spray. Pour potato mixture into the casserole dish. Bake 20-25 minutes, or until lightly brown around the edges. Remove from the oven and top with marshmallows. Return the sweet potatoes to the oven and allow the marshmallows to slightly brown; about 3-5 minutes. Serve hot.
