3 tbsp coconut oil
1 28oz can crushed tomatoes
2 14.5oz cans garbanzo beans
1 onion, chopped
6 cloves garlic, minced
2 tbsp grated ginger
1 tbsp cumin
1 tbsp coriander
1 tsp turmeric
1 tsp garam marsala
1 tsp chili powder
2 tsp sugar
2 tbsp lemon juice
1/2 cup cilantro, chopped

Directions:
Directions:
Add coconut oil, onions, salt, and cumin to a medium/high pan. Sauté 5-10 min, until onion is tender, then add cilantro, garlic, ginger, chili powder, turmeric, coriander. Stir and cook another 2-3 min.

Add tomatoes, garbanzo beans, and season to taste. Lower heat and simmer 25 minutes uncovered.

Once thickened to a stew, add sugar if desired. Remove from heat, and add garam marsala and lemon juice. Serve with lemon wedges and some freshly chopped cilantro.

You can make an easy version of this using curry powder and garam marsala in place of other spices.
