Ingredients:  
Ingredients:  
1 egg plant, peeled, cooked and cubed Cook for 7 minutes, adding 1 tsp. salt to water.
1 package seasoned stuffing
1 can mushroom soup
1 cup grated cheese
1 small onion, chopped

Mix all. I bake mine in a 2 quart ceramic casserole dish. Bake in oven at 350 degrees for 35 minutes.
