3 Large Eggs, beaten
¾ Stick Butter (6 Tablespoons)
1½ Cups Sugar
Pinch Salt
1 Cup Crushed Pineapple, drained
1 Cup Flaked Coconut
½ Teaspoon Lemon Extract (or Coconut or Rum Extract)

1 Pie Crust, 9 inch

1. Cream the butter and sugar together in a medium bowl.

2. Add remaining ingredients and mix well.

3. Pour into the 9" unbaked pie shell and bake at 350º for 1 hour until the center is set.
