Ravioli Dough

6 cups flour
5 eggs
water

Directions:

1. Mix flour and eggs. Add water until stiff dough forms. Knead with hands until ready to roll. Keep covered with damp towel.
 

Ravioli Filling


Ingredients:  
Ingredients:  
4 lbs ricotta cheese
4 eggs
2½ - 3 cups romano cheese
2 tbs dried parsley
cinnamon
salt
pepper

Directions:
Directions:
1. Mix ricotta, eggs, cheese and parsley. Add cinnamon, salt & pepper to taste, beat well.
 

Ravioli Meat Filling


Ingredients:  
Ingredients:  
2 lbs lean ground beef
2 pkgs frozen spinach, chopped, cooked and drained
1 large onion, chopped fine
3 garlic cloves
2 eggs
romano cheese
breadcrumbs
1 tsp each rosemary and margoram

Directions:
Directions:
1. In a large frying pan, cook onion, garlic, ground beef and spices. Drain fat and let cool.

2. In a large bowl, blend ground beef mixture, chopped spinach, eggs, bread crumbs and cheese. Chill until ready to use.
