2 small onions, chopped
4 cloves garlic, chopped
1/2 bell pepper, chopped
olive oil
2-3 c. cooked pork, cut up small
6 c. boiling water
3-4 bay leaves
3 c. raw rice
2 pkg. Vigo seasoning
salt and pepper to taste

In 5 qt. pot, fry onions, garlic and bell pepper in olive oil. When done, remove from pot and fry cooked pork for a few minutes. Add all ingredients. When it boils again, put a piece of brown paper over top of pot, cover with lid, turn heat to low and cook for 30-45 minutes.

This was Mother's recipe. I don't know why she used the brown paper, but her pork and yellow rice always turned out perfectly and so delicious.
