550g or 14oz flour
2 tsp instant dry yeast
1 tbsp sugar
1 cup + 2 tbsp lukewarm water

Filling:

1 tbsp cooking oi, melted butter/lard or coconut oil
2 stalks scallions finely chopped
1/2 tsp salt or to tast
1/2 tsp Chinese Five spice powder/ground Sichuan pepper

Garnishing:
1 tbsp sesame seeds
1/2 tsp cooking oil

Prepare dough: Dissolve yeast in a little water before mixing into dry ingredients;
If using hands mix flour, yeast and sugar in bowl adding water gradually while mixing; Coarsley combine to form a dough; rest for 10 min then knead again until smooth.

If using stand mixer - add all ingredients for the dough and knead on low speed for 8 min until smooth dough forms.

Rest dough in mixing bowl covering with damp cloth; Leave to rest in warm place until doubled in size (between 40-120 minutes)

Shape bread - knead dough until it goes back to original size; using a rolling pin flatten into a rectangle shape until it's about 1/2cm thick. Brush dough with oil then sprinkle with scallions, salt and five spice powder or Sichuan pepper. Roll dough into a rope (from shorter side). Cut it open lengthways. Then swirl into a disc. This creates layers of dough. Transfer to baking tray (line with parchment or cornmeal). Flatten with hands, Brush a layer of oil and sprinkle with sesame seeds. Leave to rest 10 min; Bake at 375 C for 30-35 minutes until golden on surface.

This is a tasty bread. I added more Five spice powder and salt to taste; Goes well with Congee.
