6 T. flour
6 T. fat
6 qts. chicken stock
1 bunch celery
4 lg. onions
1 bunch green onions
8 stems parsley
1 bell pepper
1 pt. okra, sliced
4 pods garlic
1 can tomato paste
1 #2 can tomatoes
1 sm. bob. w. sauce
1 t. hot sauce
1 bay leaf
dash thyme
salt
2 lbs. peeled, deveined shrimp
rice
gumbo file

Directions:
Directions:
Brown fat and flour in skillet. Add chicken stock.
Cut up celery, onions, green onions, parsley, bell pepper, okra and garlic and brown in fat.
Add tomato paste through salt to stock.
Simmer 2 hours. Add shrimp. Cook until shrimp are tender. Serve over hot rice. Add 1 scant t. gumbo file to bowl.
