2 T. flour
2 T. vegetable oil
1 c. chopped onion
1 c. chopped celery
1/2 c. chopped green pepper
2 cloves garlic, minced
1 c. sliced green onion tops
1/2 lb. chicken giblets , chopped
2 t. salt
3/4 t. black pepper
1 c. chicken broth
3 c. hot cooked rice
1/4 lb. ground beef
1/4 lb. ground pork

Directions:
Directions:
Brown flour in oil until deep brown, stirring constantly to prevent burning. Add onion, celery, green pepper, and garlic. Cook until vegetables are tender; stir in beef, pork, giblets, and seasonings. Continue cooking until meat loses color. Blend in broth. Cover and simmer 25 min. Stir in rice and onion tops. Cook five minutes longer. Mixture should be slightly moist. Makes 6 servings.

You may stuff the bird with this without simmering. Bake as usual.
