3 c. sifted cake flour (plain is OK)
1 t. baking soda
1 t. salt
1½ t. cinnamon
1/2 t. nutmeg
3 eggs
3-4 c. peeled & finely chopped apples, (about 6-7 apples)
1½ c. chopped pecans
1½ c. vegetable oil
2½ t. vanilla
1 c. white sugar
1 c. brown sugar

Icing:
1/4 c. milk
1/2 c. butter
1 c. brown sugar
1½ - 2 c. confectioners sugar

Directions:
Directions:
In a medium bowl, whisk together the flour, baking soda, cinnamon, salt and nutmeg. Set aside. In a very large mixing bowl whisk eggs. Whisk in oil, sugars, and vanilla into the eggs until well blended. Gradually whisk in the flour mixture just until well blended. Fold apples and pecans into batter. (batter will be thick and just coat apples). Turn into prepared bundt pan, spreading to edges of pan. Cook at 350º for 1 hour and 10 minutes. To make icing, cook milk, butter and brown sugar for 3 minutes. Cool and add confectioners sugar. If too thick add warm water. Ice cake and put a few nuts on top.

Alternative: This can be cooked in a 9x13 pan at 325º for 60 minutes.
