3 eggs - separated
1.5 cups buttermilk
1 3/4 cup flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup - 1 stick butter melted

REAL maple syrup
strawberries
blueberries

Directions:
1. beat egg whites till stiff
2. mix dry ingredients together
3. mix egg yolks and buttermilk together
4. melt butter
5. alternate mixing dry ingredients, liquid ingredients, and butter to egg whites - keep mixer on low and mix just til incorporated
6. batter will be puffy
7. place on waffle iron - individual settings required

serve with sliced berries and heated maple syrup.

This is my own variation of a recipe I found. I like it because it makes a rich but light waffle. Grandchildren prefer chocolate chips in the waffle holes.....

Molly's note: If you dare use Mrs. Butterworth's syrup, MayMay will be very disappointed in you.
