1 pork tenderloin
1 cup bread crumbs
Salt, pepper
Grating cheese like Parmesan
1 egg, beaten

Directions:
Preheat oven to 350º. Trim the tenderloin of any fat or silver-skin. Slice it down the middle but not all the way through.

Mix bread crumbs, salt, pepper, cheese and egg in small bowl. If mixture is too dry, add a little milk. Stuff the tenderloin and either tie it with kitchen string or fasten it with skewers.

Use egg white to roll pork in and cover with chopped nuts. May add a little olive oil to tenderloin so it browns nicely.

Bake about 30-40 minutes depending on size of tenderloin.
