2 tablespoon extra virgin olive oil
4 chicken breasts, boned and skinned
1/4 teaspoon freshly ground pepper
1/4 cup onions, chopped
1 garlic clove, minced
1 cup prepared chicken broth (I use the new Campbell's broth in a tetra pak)
1 cup aspasagus spears, woody portion removed and cut into 1" pieces
2 cups white mushrooms, sliced
3 tablespoon balsamic vinegar
2 tablespoon butter, softened
2 tablespoon pine nuts, toasted

1. In a large skillet, heat oil over medium high heat. Add chicken and cook for 2 minutes per side.
2. Season each side with pepper. Add onion and garlic cooking for 2 minutes.
3. Add chicken broth and bring to a boil. Reduce heat and simmer chicken covered for 5 minutes.
4. Add asparagus, cover and cook 5 to 7 minutes or until chicken is cooked through.
5. Add mushrooms, cover and cook 1 minute.
6. Remove chicken, asparagus and mushrooms with a slotted spoon.
7. Add balsamic vinegar to liquid in skillet. Over high heat, bring liquid to a boil for 5 minutes until reduced to 1/2 cup. Remove from heat. Whisk butter into skillet sauce.
8. Arrange chicken and vegetables on platter. Top with sauce and pine nuts.
