Cake:
2 cups sugar
1 1/4 cups oil
4 large eggs
2 cups flour
2 tsp baking soda
1 Tbsp cinnamon
1 tsp salt
3 cups grated carrots
1 cup chopped walnuts

Frosting:
12 oz. powdered sugar
2 - 3 oz cream cheese - room temperature
1 tsp vanilla extract
2 Tbsp butter
2 Tbsp milk

Directions:
Directions:
1. In a large bowl beat sugar and oil
2. Add eggs and beat well.
3. Fold in carrots and walnuts
4. Mix flour, baking soda, cinnamon & salt together, then fold into wet ingredients. Mix well
5. Place batter into greased 9x13 pan or 2 loaf pans.
6. Bake for 45 to 60 minutes at 350º or until toothpick inserted into centre of cake comes out clean.

Frosting:
Beat powdered sugar, cream cheese, vanilla, butter and milk together.
Spread over cooled cake
Add more chopped walnuts on top if desired.
