26 lb. tomatoes, chopped
6 c. chopped celery
4 c. chopped onion
2 bell peppers, chopped
4 hot peppers, chopped
6 garlic cloves
9 c. sugar
6 c. vinegar
1/2 c. salt

Directions:
Directions:
Put tomatoes in 12 qt. or larger pot. Finely chop other veggies in processor, but don't purée. Add to pot and cook 1 1/2 hours. Add rest of ingredients; cook another 1 1/2 hours. Process in boiling water bath: 10 minutes for pints, 20 minutes for quarts. Makes 20 pints.

This looks like salsa, but tastes more like sloppy joe sauce. It's good for cooking any kind of meat in, or to add to a soup, dip, etc...

Instead of chopping the tomatoes, you can core and quarter them, cook until soft, then put through a Victorio strainer. Add other veggies and proceed with recipe.
