2 lbs ground beef, pork, turkey or bulk Italian sausage
1 1/2 cup chopped onion
4 cloves of garlic, minced
28 oz can crushed tomatoes
12 oz can of tomato paste
8 oz can of tomato sauce
4 tsp dried basil, crushed
2 tsp dried oregano, crushed
1 tsp salt
1 tsp pepper
10 oz lasagna noodles (12 noodles)
3 beaten eggs
24 oz ricotta cheese or cream-style cottage cheese, drained
1 cup grated Parmesan cheese
2 Tbsp dried parsley flakes
24 oz shredded mozzarella cheese

For meat sauce, in a large saucepan, cook meat, onion & garlic till meat is brown and onion is tender. Drain fat. Stir in undrained tomatoes, tomato sauce, tomato paste, basil, oregano, salt & pepper. Bring to boiling; reduce heat. Cover & simmer for 15 -30 minutes, stirring occasionally. Meanwhile cook lasagna noodles according to package directions. Drain.
For filling, combine eggs, ricotta or cottage cheese, 1/2 cup of Parmesan cheese and the parsley flakes.
Layer half of the cooked noodles in a 13 X 9 baking dish. Spread with half of the filling. Top with half of the meat sauce and half of the mozzarella cheese. Repeat layers. Sprinkle the remaining Parmesan atop.
Bake in a 375 degrees oven for 30 to 35 minutes or till heated through. Let stand 10 minutes.

This has been my go to lasagna recipe for 30 years. I prefer mixing ground pork and ground Italian sausage.

To make ahead: Prepare as above, except, after assembling, cover with plastic wrap and refrigerate up to 24 hours. Remove plastic wrap and cover with foil. Bake in a
375 degree oven for 35 minutes. Uncover and bake about 20 minutes more or till heated through.
