7 lb. green tomatoes,
or cucumbers, sliced 1/4"
2-3 c. pickling lime
2 gal. water
1/2-1 box pickling spice
2 qt. vinegar
5 lb. sugar
1 T. salt

Directions:
In crock or large non-metal bowl dissolve lime (3 c. for tomatoes, 2 c. for cucumbers) in water. Add vegetables; soak 24 hours. Rinse well. Soak in fresh water 4 hours, changing water and adding ice each hour (to rinse out excess lime, so the pickles stay sealed). Drain well. Bring pickling spice tied in cheesecloth, vinegar, sugar and salt to a boil. Pour over pickles; let stand overnight. On third day simmer pickles in syrup 1 hour. Put pickles in jars and fill with syrup, with 1/2" headspace. Wipe rim, put seal and band on. Process in boiling water bath, 10 minutes for pints, 15 minutes for quarts. Remove from water; let sit undisturbed 24 hours. Makes 7 pints.

These are really good and crisp. The recipe came from cousin Marjorie in North Carolina and also from Aunt Thelma Charles from Tennessee. This is very time consuming, but well worth it.
