2 pounds chorizo sausage (or half breakfast sausage)
2 large sweet onions
3 large portabello mushroom caps.

Tortillas
Sour cream

Salsa:
4 medium tomatillos
1/2 jalapeño pepper
1 t vinegar
1 clove garlic

Directions:

Process salsa ingredients on high.

Fry sausage. Sautée onions in sausage drippings
Slice caps in 1/2 inch thick slices. Heat mushrooms quickly in microwave to preserve firmness

Layer all in tortilla
