2 cups cooked, mashed sweet potatoes (I use fresh not canned);
1 cup firmly packed brown sugar
1/2 cup butter (1 stick) softened
2 eggs at room temperature; separate the yolks and the whites
1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp. salt;
1/2 cup evaporated milk
1/4 cup sugar;
1 unbaked 10-inch pastry shell (I use deep dish)
Whipped cream for topping

Preheat oven to 400º.

Combine sweet potatoes, brown sugar, butter, egg yolks, spices and salt in a large mixing bowl; beat until light & fluffy. Add evaporated milk and beat just until blended. Beat egg whites (that are room temperature) until foamy; gradually add sugar, 1 tbsp. at a time, until stiff peaks form. Fold into potato mixture. Pour filling into pastry shell. Bake at 400º for 10 minutes; reduce temp. to 350º and bake for an additional 45 to 50 minutes or until set. Cool. Top with dollops of whipped cream, if desired.

This is kind of a pain to make but it is a family favorite and a Christmas tradition. One of John's favorites!
