1 egg white or one whole egg
1 c unsweetened coconut
1/4 c sugar or 2 tbsp. if sweetened coconut is used
pinch salt
dash of extact (vanilla, almond, orange)
grated citrus zest

Directions:
Directions:
Beat egg white until foamy. Mix with other ingredients.

Let mixture sit for 30 minutes to absorb liquid.
Wet hands and roll into balls

Line baking sheet with parchment paper
Bake for 13-15 minutes at 350 depending on size
