1/2 lb lean ground beef
1/2 C chopped onion
1 C chopped bell peppers; preferably varied colors
2 cloves garlic
1 15 oz can Mexican style diced tomatoes
1 can water (rinse out can with water) or one bottle beer.
2-3 TBL chili powder
1/8 tsp red pepper flakes
1/2 tsp cumin
1/2 tsp smoked paprika
1 tsp cinnamon
1 TBL cocoa powder
1 TBL sugar
1 cup cooked black eyed peas or small white beans
1/2 C frozen corn kernels
1/4 C uncooked rice
Optional toppings; Sour cream, shredded cheese, avocado, chopped cilantro

Spritz large pot with oil
Add ground beef, onions, and peppers and sauté until softened
Add garlic and cook another minute
Add all remaining ingredients. Bring to boil then lower heat and simmer for 60 minutes, adding more liquid if needed.
Serve with optional toppings.
