2 1/2 pounds cooking apples, peeled, quartered, cored and thinly sliced (8cups)
1/3 cup firmly packed light brown sugar
1/2 cup granulated sugar
1 tablespoon cornstarch or 2 1/2 tablespoons flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons butter
sugar for sprinkling

1. Place apples in a large bowl, mix sugars, cornstarch, cinnamon, nutmeg and salt in a small bowl; sprinkle over apples; toss gently to mix. Let stand until a little juice forms, about 10 minutes
2. Meanwhile, prepare pie crust. Fit crust into the bottom of a 9 inch pie plate. Fill with apple mixture. Dot apples with butter.
3. Place 2nd crust on top of apples. Trim both crusts so there is a 1 inch overhang. Turn edges under. Press to seal. Pinch to flute the edges. Make 5 small slices in the top crust to vent. Sprinkle lightly with sugar.
4. Bake pie in a 425º oven for 15 minutes. Lower temperature to 375º and bake for 40-45 minutes or until juices bubble through vents and apples are tender.
