2¼ cups all-purpose flour
2¼ tsp baking powder
¾ tsp baking soda
3 Tbsp granulated sugar
¼ tsp salt
6 Tbsp unsalted butter, cold, cut into chunks
2 large egg yolks
¾ cup plus 2 Tbsp heavy cream
3 Tbsp raw or turbinado sugar

1. In a large bowl, whisk together flour, baking powder, baking soda, granulated sugar and salt until thoroughly combined. Add butter and break into small bits, no larger than a small pea, using a pastry blender.
2. In a small bowl, whisk yolks with 2 Tbsp cream, them pour remaining cream in and whisk to combine. Pour into butter-flour mixture. Use a rubber spatula to mix and mash it togetherinto one cohesive ball.uu
3. Press the dough flat into the bottom of the bowl and divide into 8 pie-like wedges. Place turbinado sugar into a bowl. Roll each wedge into a ball, then flatten slightly. Roll in sugar, leaving one side uncoated.
4. Place balls uncoated side down on a baking sheet lined with parchment paper. Bake for 15 minutes at 400ºF, until golden all over. Let cool completely while preparing strawberries.
5. Carefully split each cooled cake with a serrated knife. Spoon berries and juices over the bottom half. Heap generously with whipped cream. Place lid on top and serve.
 

Strawberry filling

1 lb strawberries, hulled and halved
2 Tbsp granulated or turbinado sugar
1 Tbsp fresh lemon juice (optional)
1 cup heavy or whipping cream

1. Mix berries, sugar and lemon juice. Let macerate so that juices run out.
2. Beat cream until soft peaks form. Add sugar to taste.
