1 cup bulgur
1/4 cup butter
1 cup chopped celery
1/2 cup chopped onion
3 cups chicken broth
1 1/2 cups cooked wild rice
1/2 cup snipped fresh parsley
1 tablespoon snipped fresh basil, or 1 teaspoon dried
2 teaspoons snipped fresh oregano, or 1/2 teaspoon dried
1/4 teaspoon pepper
2 cups sliced mushrooms
1 cup chopped toasted walnuts

Directions:
Directions:
In a large saucepan cook and stir bulgur in hot butter for 5 minutes. Stir in celery and onion and cook until tender. Stir in chicken broth, pepper, cooked wild rice, parsley, and dried basil and dried oregano if using dried herbs. Cover and simmer for 10 minutes. Stir in mushrooms, walnuts, fresh herbs if using, and transfer to a 2-quart casserole. Cover and bake in 350º oven for 30 minutes or until liquid is absorbed.
