"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
12 slices bacon
6 slices bread, ½-inch thick
3 T. unsalted butter, at room temperature
6 large eggs
6 T. freshly grated Parmesan
1½ tsp. thyme leave
Kosher salt and black pepper, to taste

Directions:
Directions:
Preheat oven to 400º. Place bacon in a single layer onto a baking sheet. Place into oven and bake until par-cooked, about 5-7 minutes. Transfer to a paper towel-lined plate. Lightly oil a baking sheet or coat with nonstick spray. Using a 3-inch biscuit cutter, make a hole in the center of each bread slice. Butter one side of the bread slices. Place the bread onto the prepared baking sheet, buttered side down. Add bacon slices and eggs, gently cracking the eggs into each hole and keeping the yolk intact. Sprinkle with Parmesan and thyme; season with salt and pepper, to taste. Place into oven and bake until the egg whites have set, about 12-15 minutes. Serve immediately.
