2 eggs, beaten
6 tablespoons unsalted butter or coconut oil, room temperature
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
3/4 cup masa harina
1 small can chopped chilies
1 can corn, drained
8 ounces Cheddar cheese, grated, divided use

Directions:
Directions:
Preheat oven to 350 degrees. Butter a 9x11-inch dish.

Beat together the eggs, butter or oil and masa harina. Stir in the chilies and corn. Reserve 1/3 of the cheese and stir the remainder into the batter. Spoon into the prepared dish and bake 35 minutes. Top with the reserved cheese and bake 5 minutes longer.
