12 oz unpeeled red potatoes, quartered (about 4 medium sized)
2 strips bacon
¼ cup chopped onion
2 tablespoon apple cider vinegar
1 teaspoon sweetener of choice (I used a Truvia-sugar mixture)
¼ teaspoon dried thyme
1/8 teaspoon salt
¾ teaspoon cornstarch
1/3 cup water
1 ½ cup fresh or frozen cut green beans, cooked.
¼ teaspoon salt

1. Fill a pot with water add the potatoes and bring to a boil. Boil the potatoes for 20 minutes or until fork tender. Drain and set aside.

2. In a saute pan, cook the bacon until the fat is rendered and the bacon is crisp. Remove the bacon and set aside.

3. Add the onion and cook 2-3 minutes. Add the vinegar, sweetener, thyme, and salt. Stir over low heat.

4. Dissolve the cornstarch in water and add to the saute pan. Cook 1-2 minutes until the sauce thickens.

5. Combine potatoes and green beans. Sprinkle with salt. Pour the sauce over the entire potato mixture, lightly toss, and top with crumbled bacon.

This recipe originated in one of my favorite cookbooks, Eat What You Love, by Marlene Koch.

I used fresh green beans and I cooked them in a bowl with a little water in the microwave for 4 minutes. I also used a mixture of red potatoes and yellow potatoes.
