2 cans condensed chicken broth (can be uncondensed)
1/2 or more large jar Cheeze Whiz
2 c. grated cheddar cheese (medium to sharp)
1/4 c. Parmesan cheese
1/2 stick butter/margarine
4 T. cornstarch

Directions:
Directions:
Add frozen spinach to chicken broth and heat until boiling, then simmer. In a separate big pan, melt butter and sauté onions until transparent. Add half and half. Stir constantly over medium heat until mixture is almost boiling. Start adding cheese and 1/2 or more Cheeze Whiz. Add cornstarch slowly (after mixing with small amount of hot water), stirring constantly. Add cheese mixture to spinach and let simmer for as long as possible.

This reminds me of my friend, Julie Sheets Quandt, and the Macomb Dining Company at WIU. Over the four and half years I attended WIU, we patronized the Dining Company many times with our college group and with family visits. Spinach Bisque was their specialty.
