2 15 oz. cans chick peas
5 mint leaves
1/4 cup Italian flat leaf parsley
2 small tomatoes
1/2 cup Kalamata olives
6 tablespoons extra virgin olive oil
3 tablespoons red wine vinegar
Salt
Pepper

Directions:
Directions:
Drain and rinse chick peas and place in a bowl. Finely chop mint leaves and Italian flat leaf parsley. Dice small tomatoes and add Kalamata olives, halved. Combine all ingredients in a bowl with chick peas. Add extra virgin olive oil, red wine vinegar, salt, and pepper. Mix and season to taste.
