6 chicken thighs
1 t. oregano
1 t. basil
1 t. salt
pepper to taste
1 T. olive oil
2 T. garlic, minced
1/3 c. balsamic vinegar
2 1/2 T. brown sugar
1 1/2 c. grape or cherry tomatoes
8 oz. fresh mozzarella, cut in 6 slices
1/4 c. fresh basil, minced
GLAZE:
1/3 c. balsamic vinegar
2 T. brown sugar

Directions:
Season chicken; sear in oil. Remove from pan. Fry garlic until fragrant. Add vinegar and brown sugar. Bring to a boil; simmer, while stirring occasionally, until thickened (5-6 minutes). Add chicken, turning to coat. Add 1 c. of tomatoes, whole, around chicken and place in oven. Bake at 400º until completely cooked (30 minutes). Top with cheese; return to oven for 5 minutes to melt cheese. Slice remaining 1/2 c. tomatoes in half; place on top; pour some glaze on; garnish with basil. Serve immediately. GLAZE: Bring vinegar and sugar to boil. Simmer while stirring occasionally, until reduced by half. Drizzle over chicken when ready to serve.
