4 egg whites (room temperature)
1 T. cornstarch
1 T. vinegar
1 t. vanilla
2 1/2 c. confectioners sugar

Directions:
Beat egg whites until foamy; add cornstarch, vinegar and vanilla. Continue beating at high speed, adding sugar 2 T. at a time; beat until mixture becomes stiff peaks and is shiny like satin. Drop by tablespoons onto parchment paper-lined cookie sheet. Place in 200º oven with a wooden spoon handle in door to keep it from closing all the way. Bake 3 hours until meringues are dry and can be easily removed. I make mine a little smaller and cut the baking time down to 2 1/2 hours. Sometimes they are done sooner.
