⅓ Cup Vegetable Oil
1½ Cup Mashed Ripe Bananas
½ Tsp. Vanilla
3 Eggs
2½ Cups Baking Mix (Pioneer/Biscuick)
1 Cup Sugar
½ Cup Chopped Nuts (Pecans/Walnuts)

Pre-heat oven to 350º. Grease bottom of loaf pan or use baking spray. Stir all ingredients in pan with a fork until moistened; beat vigorously for one minute.

Bake 55 to 65 minutes, or until toothpick inserted in center comes out clean. Allow to cool for five minutes. Remove from pan.

This recipe is not only easy to make, it has been a lifesaver when I find myself with over-ripe bananas. You can control the amount of sweetness by decreasing the sugar to please your palette.
