1 (15.25 oz.) yellow cake mix (I use Pillsbury sugarfree yellow cake mix)
3 eggs
¼ c. vegetable oil
1 c. water
Baker’s Joy baking spray

Filling:
T. Marzetti’s sugarfree strawberry glaze
1 c. fresh strawberries, sliced

Frosting:
1 (8 oz.) cream cheese, softened
1 c. powdered sugar
1 tsp. vanilla extract
1 (8 oz.) Cool Whip

Directions:
Directions:
Preheat oven to 350º.

Prepare cake pans by spraying with Baker’s Joy spray.

Mix together cake mix, eggs, oil and water and bake according to directions on box. Do not over bake.

**If you bake numerous layers, start checking for doneness at 15 minutes.

Remove from oven and let cakes cool for 10 minutes. Wrap the cakes, individually, in plastic wrap and freeze for 1 hour.

If using rectangular pan, let cake cool in pan for 30-40 minutes, wrap pan in plastic wrap and freeze for 1 hour.

Combine glaze and fresh strawberries together in medium bowl. Cover and set aside.

Remove cake(s) from freezer and layer with strawberry glaze mixture between each layer.

For rectangular pan, remove cake from pan and cut in half. Put one half of cake back in pan and add glaze mixture to top, then put other half of cake on top.

Mix cream cheese, powdered sugar, and vanilla with mixer until creamy. Fold in Cool Whip and combine well. Spread frosting over whole cake.

Refrigerate and keep cold until ready to serve.
