Ingredients:  
1 stick butter, divided
2 tbsp flour
2 cups milk
2 b. Jalapenos Velveeta cheese, cut up in cubes (must us jalapeno Velveeta)
2 cups Sharp cheddar cheese shredded
1 1/2 lb. elbow macaroni cooked, drained
Ritz crackers for topping, crushed

Directions:

1. Boil macaroni, until tender, drain
2. Preheat oven to 400 degrees
3. Melt 1 stick of butter in large saucepan on low heat, add flour, and make Roux (light colored roux) cook a few minutes
4. Gradually add milk; cook, stirring constantly, add Velveeta cheese cubes, stir until melted
5. Stir in macaroni. Blend well.
6. Pour into lightly greased casserole dish.
7. Sprinkle shredded cheese over top.
8. Bake at 400 degrees for 10-15 minutes or until cheese is melted. Don't overcook.
9. Remove from over sprinkle casserole with crushed Ritz Cracker crumbs and bake about 5 minutes until brown. Don't burn just brown.
