1 c. brown rice flour
1/2 c. cornstarch
1/4 c. sweet rice flour
1/4 c. potato starch
1/2 c. cocoa
1 1/2 t. baking powder
1 1/2 t. baking soda
2 c. sugar
1 t. salt
1 t. xanthan gum
1 stick butter, browned
1 c. hot coffee
1 c. sour cream
2 eggs
2 t. vanilla

Mix dry ingredients. Set aside. Mix butter, coffee and sour cream quickly so that butter doesn't clump. Whisk in eggs and vanilla, then dry ingredients until smooth. Pour into 2 pans: a greased 9x13 pan, and a 9x13 pan lined with greased parchment paper. Bake at 350º for 18-20 minutes, or until toothpick tests clean. Cool completely.

2 sticks butter, softened
2 c. powdered sugar
2 t. vanilla
dash salt
7 oz. marshmallow fluff

Directions:

Beat butter till fluffy, then beat in sugar, vanilla and salt. When smooth, beat in marshmallow fluff. Spread over the cake that is in the pan without the parchment. Cover other pan with another piece of parchment, and then a pan; flip over. Peel parchment from bottom of cake, then flip frosted cake (still in the other pan) onto this peeled surface. Flip the whole thing over, and peel the top parchment off. This is much easier to do, than it is to explain in writing!
