1 1/2 c. brown rice flour
1 1/4 c. cornstarch
3/4 c. tapioca starch
2 T. sugar
2 T. yeast
2 t. xanthan gum
2 t. baking powder
1 t. salt
1 1/2 c. warm milk (not hot)
4 T. butter, softened
2 eggs

Directions:

Mix dry ingredients in mixer bowl. Add rest of ingredients. Beat on low to combine, scrape bowl, then beat on high 3 minutes. Scoop onto parchment-lined cookie sheets with spring-loaded ice cream scoop. Smooth with a wet finger. Let rise till nearly doubled. Bake at 350º for 20 minutes, until golden brown. Immediately transfer to wire rack to cool.
