4 c. (or 29 oz. can) pumpkin
4 eggs
1 can evaporated milk
3/4 c. sugar
1/4 t. cinnamon
1/8 t. ginger
1/8 t. nutmeg
1/8 t. salt
1 pkg GF yellow cake mix*
1 stick butter, browned
Directions:
Directions:
Whisk pumpkin, eggs, milk, sugar and spices together. Pour in a greased 9x13 dish. Mix cake mix and butter. Sprinkle over filling. Bake 1 hour at 350º, until the filling is set.

*A package of GF cake mix (or you can use GF cookie mix) is quick, but what we usually use is the dry ingredients from our SUGAR COOKIES (we often keep bags of this in the freezer), with the browned butter stirred into it.
