2 c. finely chopped onion
1 1/2 c. white vinegar
6 c. sugar
2 pouches Certo liquid pectin

Directions:
Directions:
Bring onion, vinegar and sugar to a full rolling boil. Stir in pectin. Boil hard, stirring for 1 minute. Pour in jars, leaving 1/4" headspace. Process in boiling water bath 10 minutes.

Ways we use this: on the side with meat or a casserole; on a sandwich; spooned over chicken or pork chops and baked. Sometimes we add garlic or jalapeņo to this recipe.
