1 1/3 c. brown rice flour
1/3 c. potato starch
1/3 c. tapioca starch
1 1/4 c. sugar
1/3 c. cocoa
1 1/2 t. baking soda
1 t. salt
1/2 t. xanthan gum

1 stick butter, browned and cooled
1 c. hot coffee
1 c. sour cream
2 eggs
2 t. vanilla

Directions:
Directions:
Combine dry ingredients. Set aside. In large bowl, mix butter and coffee. Whisk in sour cream, then eggs and vanilla. Beat in dry ingredients until smooth. Bake in greased 12x18 pan for 17-20 minutes, OR 9x13 pan for 35-40 minutes at 350º. Frost immediately.

1 stick butter, browned
1/4 c. cocoa
1/3 c. milk
4 c. confectioner's sugar
1 t. vanilla
few dashes of salt

Directions:
Directions:
Bring butter, cocoa and milk to a boil. Take off heat. Beat in sugar, vanilla and salt. Spread hot frosting over hot cake.

If you cover this cake tightly, the frosting will turn all wet and runny. We just leave it uncovered, or put a cover on a little bit sideways if needed.
