9 inch unbaked pie crust
1 T. Dijon mustard
8 oz. cooked ham, diced
4 green onions, sliced
8 oz. fresh mushrooms, sliced
8 oz. fresh mozzarella cheese, sliced
2 medium plum tomatoes, thinly sliced
1 egg
1/3 c. half and half
1 T. fresh basil, chopped
1/8 t. black pepper

Preheat oven to 350º. Place the pie crust in a 9-inch pie plate and prick with a fork. Place pie weights or dried beans on top of the crust and pre-bake for about 8 minutes. Remove the weights and allow to cool slightly before spreading the Dijon mustard across the bottom of the crust. Lightly sauté the ham, onions, and mushrooms. Place half the sliced mozzarella cheese on top of the Dijon mustard. Top with the ham mixture. Place a single layer of tomatoes on top of the ham mixture. Combine the egg and half & half until well mixed. Pour over tomatoes. Place the remaining cheese slices on top and sprinkle with basil and pepper. Bake 40-50 minutes or until lightly browned and set. Cool on a wire rack for 20 minutes before cutting into wedges.
