4 boneless, skinless chicken breasts (or thighs)
1/2 c. Italian dressing
1/2 c. basil pesto, divided
3-4 plum tomatoes, thinly sliced
1/2 - 3/4 c. grated mozzarella cheese

Directions:
Directions:
Place chicken in a gallon size zip-top freezer bag. Using a mallet, pound the chicken until the breasts are fairly uniform in thickness. Pour the Italian dressing into the bag, seal well and allow to marinate at least 30 minutes. Preheat oven to 400º. Place the chicken in a 11x17 inch baking dish. Top each with 1 T. of pesto and spread to cover the top of the chicken. Top each chicken piece with a fourth of the sliced tomatoes. Sprinkle the cheese over the top of the tomatoes. Cook for 20-25 minutes or until an internal temperature of 165º is reached or the chicken tests done.
