2 c. GF chocolate cookie crumbs
3 T. butter, melted
4-8 oz. pkgs. cream cheese,
softened
1 c. sugar
dash salt
1 t. vanilla
1 c. sour cream
4 eggs
1 c. chocolate chips, melted & cooled

Directions:
Directions:
Mix cookie crumbs and butter. Press in bottom of 9x13 pan. Bake 10 minutes at 350º. Mix cream cheese, sugar, salt and vanilla just until smooth; stir in sour cream. Scrape bowl. Add eggs; mix just until blended. Set aside 1 c. batter. Stir chocolate into remaining batter; pour over crust. Top with spoonfuls of plain batter; swirl gently with a knife. Bake 30 minutes at 350º; until center loses its wet-looking shine. It will jiggle slightly, but not be "soupy". Cool a few minutes; run a sharp knife around edges to loosen it from the pan; this will help keep it from cracking as it cools. Let cool; then chill 12-24 hours. To slice neatly: dip a thin, sharp knife in hot water, then cut a slice. Repeat each time.

Have all ingredients at room temperature so they will mix easily. Beat on low the whole time with a paddle, if you have it. If you whip too much air into the batter, it will rise and crack, then fall.
