1 c. basmati rice (or other rice of your choice)
2 (15-oz.) cans pink beans or small read beans, do not drain
1 sweet potato, cubed (Optional)
1 (8 oz.) can tomato sauce
½ c. sofrito (either 2 servings American Sofrito or purchased)
2 packets Sazon
½ tsp. garlic powder

Directions:
Directions:
If using basmati rice, rinse rice. Bring 1½ c. water to boil in saucepan with lid. Add rice, bring to boil again and then turn heat to low, cover and let cook for 5 minutes. Remove from heat, leaving lid on, and let rest for 20 minutes. Before serving, add salt to taste and stir. For beans, combine all ingredients and let cook over medium heat at least 30 minutes, stirring occasionally, until sweet potatoes are soft. Serve beans over cooked rice.
