2-3 c sliced okra
1 onion
1 egg
1 c gluten free all purpose flour mix
1/2 c coconut oil or olive oil
to taste salt and pepper
1/2 tsp each: garlic powder, paprika, sugar, onion powder, and sage (combine all these ingredients together and sprinkle on the okra after it's cooked)

Dice the onion. Clean and slice the okra. (Use smaller okra because it will be tender when cooked. Larger okra tends to be woody and tough.) Place onion and okra in a large ziplock bag with 1/2 c. flour and shake. Add an egg to the bag and shake well to coat all the ingredients with egg. Add remaining flour and shake. Fry in olive oil or coconut oil for 5-7 minutes. When browned, remove the okra from the pan and place it on a paper towel to drain and season with seasoning mix recipe above.
