1 1/2 c. brown rice flour
1 1/4 c. cornstarch
3/4 c. tapioca starch
1 1/3 c. sugar
2 t. xanthan gum
1 t. salt
2 sticks butter, softened
1 egg + 2 yolks
3 T. water
4 t. almond extract

Directions:
Directions:
Stir dry ingredients together in mixer bowl. Add rest of ingredients and mix well. Scoop onto greased cookie sheet with cookie scoop. Flatten to 1/4" with the bottom of a glass dipped in GF flour. Bake 10 minutes at 350º, or until the bottom of cookies are just starting to slightly brown (the tops won't look much different from when they went in the oven). They will still be very soft, but will firm up as they cool. Transfer to foil to cool. Frost when completely cool.

1 T. water
2 t. almond extract
dash of salt
1 c. confectioner's sugar
Coarse sugar for sprinkling tops

Beat all frosting ingredients till smooth and spread on cookies. Sprinkle with coarse sugar if desired.

This cookie dough works great for a GF version of Judy's Nutmeg Logs by switching the extracts and sprinkling with nutmeg instead of sugar. Or you can replace the almond extract with vanilla or lemon for a more traditional sugar cookie flavor.
